Apple Cake
Sunday night I had the urge to bake. It's not often that this happens to me, but it did. So I made a dutch apple cake, which according to my recipe I had learned to bake in home ec class over half my life ago. It didn't turn out as good as I remembered it, but when you last had something over a decade ago, then possibly you're memory isn't quite as exact as you'd think. Memory is always a funny thing, it's never real. You may have memories of something, but they are like a picture. it's a snapshot of a moment in time that no longer exists. I can remember when I was really homesick in Paraguay, longing to go to the candy counter at Eaton's. Not sure why, I didn't especially love that place, but it was a part of home, which I missed. I quickly realized that Eaton's no longer existed, and what I was longing for was an illusion. So once again, with my cake, I realize things aren't always how you want them to be or remember them to be.
